His striking appearance features a distinctive mohawk with a black crest and gray sides, a horizontal scar across his nose and cheeks, and typically closed eyes. He wears the standard uniform draped like a cape without a tie, sports large earrings, and wields his specialized Maguro bōchō knife, Isanakiri. Saito's personality is deeply rooted in the bushido code, demanding honor, fairness, and protection of the vulnerable. This stems from witnessing his mother face discrimination as a female sushi chef at Shigarami Sushi, leading to her collapse from overwork. Taking charge of the family restaurant, Saito Sushi, at age 15, he defeated mocking traditionalist chefs, earning renown as a "genius sushi craftsman." His samurai principles compel him to respect opponents' skills regardless of rank and ensure fair battles, sometimes manifesting as arrogance, like lending Isanakiri to level the playing field. During Central's regime, Saito helps oust Director Senzaemon and enforce Azami's rules. He confronts rebels in Hokkaido's Promotion Exams, defeating Hisako Arato and contributing to her expulsion. Later, in the Regiment de Cuisine, he faces Subaru Mimasaka in a tuna-themed Shokugeki. Saito showcases exceptional knife skills, initially dismissing Subaru's copying ability but lending him Isanakiri to uphold fairness. Despite Subaru's improved "Perfect Trace: Flash" technique, Saito secures victory with his "Ten Pieces of Tuna Ruby Orbs Sushi With Gunkan Maki." Following graduation, Saito returns to manage his family's sushi restaurant, continuing his culinary career.
