Her on-screen debut came in the 1958 film Grabenplatz 17, followed by numerous roles in German film and television productions throughout the 1960s, 1970s, and beyond. However, she has primarily focused on voice acting since 2002.

As a voice actress, Ursula Sieg has lent her voice to a wide array of characters in German-dubbed versions of international films and television series. While she has an extensive body of work in dubbing, her contributions to the German dubs of anime are specific. She provided the German voice for the character Minister Dorlin in an episode of the television series Little Witch Academia. She is also the German voice for the role of strenge Lehrerin, which translates to "strict teacher," in the anime series The Yearling. This series is also known by its original title, Kojika Monogatari. The German Synchronkartei, a database of German dubbing work, also lists her under the name "strenge Lehrerin" for the series Alle meine Freunde, which is the German title for The Yearling.

Beyond her anime roles, Sieg is most renowned in Germany for being the dubbing voice of numerous actresses. Her most iconic role is providing the German voice for Rue McClanahan in her portrayal of Blanche Devereaux in the hit television series The Golden Girls and its spin-off The Golden Palace. She also dubbed McClanahan in a Columbo television film. Her other notable dubbing work includes voicing characters played by Doris Roberts, Judi Dench, and Linda Bassett, among many others.

Ursula Sieg has had extensive recurring collaborations in the realm of German audio drama, which is a significant part of her career. She is particularly well-known to younger audiences as the long-standing voice of Tante Fanny (Aunt Fanny) in the popular audio drama series Fünf Freunde (The Famous Five), a role she performed for numerous episodes from 1978 onward. She also had recurring roles in other major German audio drama series, such as various characters in TKKG and multiple roles in Die drei??? (The Three Investigators). Additionally, she is the German voice of Frau Breitenbach in the children's series Bob der Baumeister (Bob the Builder).

A notable achievement in her career is her long-standing and beloved role as the voice of Tante Fanny in the Fünf Freunde audio dramas, a series that has entertained German-speaking children for decades. Her dubbing of Rue McClanahan as Blanche Devereaux in Golden Girls is also considered a quintessential piece of German dubbing history, making the character widely recognized and loved by German audiences. With a career spanning from the 1950s into the 2020s, Sieg has demonstrated remarkable versatility, moving seamlessly between on-screen acting and a prolific career in dubbing and audio drama, amassing over 170 documented speaking roles as a dubbing actress alone.
