Cozoh Hashimoto, also written as Kozoh Hashimoto, is a Japanese manga artist born in 1965 in Tochigi Prefecture, Japan. He began his career as an assistant to the renowned manga creator Naoki Urasawa. Hashimoto is credited as the artist for several manga series, often collaborating with separate writers who provide the original story concepts. His most recognized work is Edomae Sushi Shokunin Kirara no Shigoto, a manga about sushi craftsmanship, based on an original story by Hikaru Hayakawa. This manga is known to have been adapted into an anime. Beyond this title, his other credited works as an artist include Daikichi Soba, with an original story by Rei Kido, Harune, and Buddha Head, with an original story by Masahiko Takasho. Additional manga work includes Watari Shokunin Zankenden Keita no Aji from 2006. In his personal interests, he is noted for collecting jazz records. The creator's name has occasionally been misspelled online in forms such as "Hashimoto Kozō" or "Hashimoto Kozō," but the verified reading is Cozoh or Kozoh Hashimoto.
