She later moved to the studio NOMAD before becoming a freelance director, working with studios such as Brain's Base, MAPPA, and others.

Yamazaki made her directorial debut in 2013 with the series The Eight Dog Chronicles, for which she also served as series composition writer and wrote scripts. In 2025, Yamazaki took on the role of original creator, director, and storyboard artist for ZENSHU., an original anime series produced by MAPPA. She has cited directors Matsuo Kou and Takayanagi Shigehito as her mentors. Through her work as a director on multiple popular comedy and character-driven series, and as the co-creator of ZENSHU., Mitsue Yamazaki has established herself as a significant directorial talent in the anime industry.
