Fumio Daimidou is a pivotal supporting character in the Food Wars! story, best known as the long-serving dormitory mother of the Polar Star Dormitory at the Tōtsuki Culinary Academy. Her tenure at the dormitory is exceptionally lengthy, having served in this capacity for at least two decades, which gives her a unique historical perspective on the institution.

Physically, Fumio presents as an elderly woman with distinct, spiky gray hair that is often combed backward and held in place by a red hairband. Her age is marked by noticeable wrinkles around her mouth and forehead. Her typical attire while on duty consists of a yellow t-shirt, a floor-length orange skirt, and a brown apron. This matronly appearance contrasts sharply with flashbacks to her youth, where she was depicted as an attractive woman with a well-endowed figure and long, flowing gray hair.

Her personality is a complex blend of stern discipline and deep-seated benevolence. Residents of the Polar Star Dormitory often refer to her with dual nicknames that reflect this duality: the "Holy Mother of Polar Star" and, more teasingly, the "Polar Star Granny". She cares greatly for the students living under her roof, acting as a guardian and a source of stability. However, she is frequently exasperated by the chaotic environment the students create, such as the wild animals brought in by Yūki Yoshino or the smoke-infused cooking experiments of Shun Ibusaki. Despite her occasional grumbling, she is known to be patient and ultimately permissive, often allowing the students their freedom to host late-night parties and pursue their culinary growth.

Fumio holds immense pride in the history of the Polar Star Dormitory, particularly its "Golden Era" which took place approximately 23 years before the main events of the series. During this period, legendary alumni such as Gin Dōjima and Jōichirō Yukihira resided at the dormitory. Through a series of Shokugeki (cooking duels), these two central figures acquired surrounding land, which allowed the dormitory to become a financially independent, self-sustaining entity. This legacy is something Fumio values above all else, and she strives to maintain the dormitory's honor and reputation.

Her motivation for running the dormitory is deeply rooted in a philosophy of nurturing true tenacity and hidden potential. This is most evident in her personal entrance examination for prospective residents. To be granted a room, a student must cook a dish that impresses her palate, using only the ingredients available in the dormitory's kitchen. For example, while Sōma Yukihira managed to pass on his first attempt, Megumi Tadokoro famously struggled for three months before succeeding, demonstrating Fumio's rigorous standards. She is not easily swayed by reputation or presentation, valuing only the substance of the cooking and the determination of the chef.

In the story, Fumio serves as a guardian and a living link to Tōtsuki's past. Her role is often to provide context for the achievements of current students by contrasting them with the legends of yesteryear. She has a key relationship with many prominent characters. She is on familiar terms with alumni like Jōichirō Yukihira, whom she greets casually when he returns for a visit, and she was present when Sōma revealed Jōichirō to be his father, a discovery that surprised even her. She also witnessed the dormitory's slow descent into obscurity after the Golden Era before its revival began with the arrival of students like Satoshi Isshiki, who later became the 7th seat of the Elite Ten Council, and subsequently the incoming 92nd generation including Sōma and Megumi.

Regarding her own development, Fumio is largely a static character, representing the unchanging traditions and standards of the Polar Star Dormitory. Her development is seen more in the history she carries and her role as a witness to the cycles of greatness within Tōtsuki. Very little is known about her own youth, aside from an enigmatic memory of an eventful night by a lake with a man she called "Kou-chan".

While Fumio is not a frontline chef in the high-stakes Shokugeki, her notable abilities lie in her refined sense of taste and her deep, experienced knowledge of cooking. Her palate is incredibly discerning, serving as the sole judge for the dormitory's entrance exam. She is capable of evaluating dishes with a sophistication that reflects her years of experience watching young prodigies. Though her own cooking style is rarely showcased beyond the preparation of simple snacks and small dishes for the residents, her ability to manage the dormitory's kitchen and mentor its young chefs is undeniable.
