Acacia is a central figure in the history of his world, known as the Gourmet God. He is a tall, muscular man with long brown hair often tied in a ponytail, and he typically wears loose athletic clothing in maroon and purple. His legacy is built upon a lifetime of unparalleled achievement as a Gourmet Hunter. Approximately six hundred years before the main story, he discovered the Gourmet Jellyfish, a creature that led him to identify Gourmet Cells, the transformative life-forms that would redefine the planet's biology and the nature of flavor. His most legendary discovery, made in his final years, was GOD, a mythical main dish said to contain the essence of all flavors. He used this divine ingredient to end a devastating century-long war in the Human World, ushering in a new era of peace and prosperity centered on the pursuit of gourmet food.

Acacia's outward personality is that of a wise, enlightened, and selfless individual who desired peace and sustenance for all people. He possessed a brilliant scientific mind alongside a deep understanding of spiritual philosophy, using both to advance the world. He appeared to care deeply for his partner, the legendary Chef Goddess Frohze, and for their three adopted sons: Ichiryuu, Jirou, and Midora. His wisdom was also practical; mindful of Jirou's immense raw power and brutal tendencies, he sealed a portion of that strength and instead taught him the refined techniques of Knocking. However, this benevolent facade conceals a far more complex and darker nature. Within Acacia resided a monstrous appetite demon named Neo. In truth, many of Acacia's actions over centuries were part of an elaborate, long-term plan to ultimately stop Neo, even if it meant becoming a villain himself. He was willing to sacrifice his own reputation, his family, and his life to ensure the universe's survival, manipulating events from the shadows to create a scenario where others would unite and destroy him along with his demon.

His role in the story evolves from a revered historical figure to the main antagonist of the Gourmet World arc. As the founder of the Gourmet Age and the master of the world's three strongest men, his shadow looms over everything. The quest to find the ingredients of his legendary Full Course Menu drives much of the plot. His relationships are pivotal. He is the adoptive father of Ichiryuu, the head of the International Gourmet Organization; Jirou, the Knocking Master; and Midora, the powerful and ruthless leader of the Gourmet Corp. He is later revealed to be the biological father of the protagonist, Toriko, and his rival Starjun. His relationship with his disciples is marked by both genuine affection and cold manipulation, as he used them as pieces in his grand scheme. He also had a secret arrangement with the Blue Nitro, an ancient race, to further his goals.

Acacia's power is nearly immeasurable, befitting his title. As the first to master Gourmet Cells, he had complete control over his own biology. He was the teacher of three legendary fighters, implying a level of strength that surpasses them all. His known abilities include a mastery of Knocking, which he invented and used to suppress Jirou's power. After his return, he wields the full power of the Neo demon, granting him terrifying capabilities such as consumption of energy and matter on a cosmic scale, regeneration, the ability to create Back Channels to manipulate space and time, and the power to devour anything, including souls and entire stars. His consumption of the ingredients from his own Full Course Menu, such as AIR, PAIR, and ATOM, granted him specific enhancements like super-speed healing and extrasensory perception.
