Description
Ken Matsushiro is the manager of the Pantasia Southern Tokyo branch and is widely recognized as the finest artisan of French bread in all of Japan. He is a burly, muscular man with a distinct appearance, characterized by his black afro and matching dark sunglasses. At 31 years old, he has established himself as an exceptional baker whose skills and discernment are highly respected.

His background includes a significant event from eight years prior that shaped his baking philosophy. His younger sister, Kaede, suffered a severe anaphylactic reaction due to a dairy allergy after eating bread he had made with milk and butter. As a result, he began creating all of his bread without any milk, butter, or oils, ensuring it is safe for her to eat. This dedication to allergen-free baking is so central to his process that he tests his bread by feeding it to a horse, as a horse would also refuse to eat it if it contained such ingredients.

Despite his intimidating and serious appearance, Matsushiro possesses a playful and teasing personality. He has a known interest in horses and betting on horse races. Much of his mischievous side is directed at the younger baker Kyosuke Kawachi, whom he frequently teases for his own amusement, though the jests can sometimes be a roundabout way of providing valuable hints. This dynamic stems from a belief that Kawachi is very similar to how Matsushiro himself acted in his youth. This playful nature extends to his teaching methods; he is known for shouting and acting oddly, which often serves as a hidden motivation or clue for his students when they are stuck.

Ken's role in the story is primarily that of a mentor and overseer. While he does not directly participate in the baking competitions meant for younger characters, he acts as a sharp-eyed commentator. Using his vast knowledge and experience, he is often the first to notice and explain the subtle genius behind creations, including those of the protagonist, Kazuma Azuma. He recognized Kazuma's potential immediately and took him under his wing at the Southern Tokyo branch. Matsushiro is a former teacher of Ryo Kuroyanagi, but he famously recognized Kuroyanagi's outstanding talent as a food critic rather than a baker, which led him to discourage Kuroyanagi's baking until the young man left his tutelage.

Over the course of the story, Matsushiro's development takes an unusual turn. Due to a series of unforeseen events and mishaps, he is forcibly named the next heir to a large yakuza organization called the Hashiguchi family. Despite his vocal displeasure at this situation, his natural leadership, imposing physique, and overwhelming fighting ability allow him to adapt to the role. After being nominated to lead, he is often followed by dozens of gang members and becomes involved in conflicts. By the end of the series, he officially inherits the organization and famously renames it the Afro Gang, unifying its members with afro hairstyles similar to his own.

Beyond his baking prowess, Matsushiro is a formidable fighter. His skills are such that he can single-handedly overwhelm groups of gangsters. This physical strength is also connected to his baking, as he developed his muscular build through intense training to master a powerful baking technique known as the Sun Gauntlet. His abilities as a baker are extraordinary; he notably developed a specialized germinated brown rice yeast on his own, a feat of skill that originally inspired Ryo Kuroyanagi to become his disciple. Even though he works at a branch store, he could have been an executive at the main Pantasia headquarters but intentionally chose his position to support Tsukino Azusagawa.
