Gin Dojima, an alumnus of Totsuki Culinary Academy's 69th generation and former Polar Star Dormitory resident, graduated as the top student in his class. He held the Elite Ten Council's 1st Seat during his third year, with Joichiro Saiba (later Yukihira) as the 2nd Seat. Their partnership secured numerous Shokugeki victories, funding Polar Star Dormitory into self-sufficiency during its "Golden Era." Despite his rank, Gin considered Joichiro the superior chef of their generation.
After Joichiro abruptly left Totsuki before graduation due to lost passion, Gin harbored deep regret, blaming himself for not noticing his friend's struggles. He completed his studies with Totsuki’s highest-ever graduation exam score. Declining over 800 global job offers, Gin joined Totsuki Resort at Senzaemon Nakiri’s urging, aiming to mentor students and prevent similar burnout. He advanced to General Head Chef and Board of Directors member, overseeing all resort culinary operations.
Physically imposing at 188 cm with a muscular build, Gin sports short brown hair, sharp eyes, and sideways V-shaped eyebrows. He maintains rigorous fitness, integrating workouts into his bathing routine. His serious, disciplined personality leads him to treat students as employees during the Totsuki Friendship and Rapport Training Camp. He values effort over words, strictly observes traditions like sending annual Obon and Shogatsu cards to Polar Star matron Fumio Daimido, and keenly identifies hidden issues, such as Kojirō Shinomiya’s stagnation.
Gin orchestrates pivotal student events. At a Training Camp, he facilitated an unofficial Shokugeki between Megumi Tadokoro and Shinomiya after Shinomiya expelled Megumi. Gin mandated Megumi act as head chef to prove her individual worth beyond Soma Yukihira’s support. When judges initially favored Shinomiya, Gin intervened—casting a tiebreaking vote for Megumi’s dish and compelling Shinomiya to taste it, reversing her expulsion. He later encouraged Megumi to prioritize hospitality in cooking. Gin also recognized Soma’s potential during their first bathhouse encounter and confirmed Soma’s identity as Joichiro’s son.
Gin’s relationships define key Totsuki dynamics. His friendship with Joichiro centers on mutual respect, though Gin often clashed with Joichiro’s relaxed student attitude. Years after Joichiro’s departure, Gin reunited with him, expressing anger over lost contact yet relief at his recovery, becoming a regular Yukihira diner patron. He opposed Azami Nakiri’s elitist ideology during Azami’s deanship, coaching rebel students to overthrow his regime. Gin later regretted not intervening sooner to prevent Azami’s extremism post-Joichiro’s exit.
Following Totsuki’s conflicts, Gin trained alongside Joichiro to prepare Soma and others for the Regimental Shokugeki. His post-canon activities include frequent visits to Yukihira Restaurant.
