Following defeat in the Regimental Shokugeki, he lost his seat but regained Elite Ten status in his third year with an unspecified rank.
His appearance features long, swept-back dirty blonde hair, gold eyes, and rectangular glasses. Eizan frequently accessorizes with rings, a rope chain necklace, and a Rolex-style watch. Casual outfits often pair leopard-print shirts with unbuttoned collared jackets. During culinary tasks, he wears a white chef's jacket with teal accents, typically rolling up his sleeves and removing his glasses.
Nicknamed the "Tootsuki Alchemist," Eizan combines ruthless entrepreneurial drive with a volatile temper. He operates as a high-priced culinary consultant, leveraging corporate clients and delinquent subordinates to manipulate academy affairs. Arrogant and favoring underhanded tactics, he reacts explosively to challenges or being ignored. Though an Elite Ten member, he considers council duties a waste of time, attending meetings only from obligation. He harbors intense animosity toward Sōma Yukihira following repeated humiliations.
Eizan enrolled at Tōtsuki solely to monetize its prestige, generating more income for the academy by his first year than it could independently. He competed in the Generation's Tōtsuki Autumn Election and attended the Autumn Leaf Viewing event alongside future Elite Ten peers.
In the Karaage War, Eizan orchestrated the Mozuya Karaage Specialty Shop's Tokyo expansion to threaten the Sumire Shopping District. After Sōma thwarted this plan, Eizan summoned him to mock his culinary ambitions and vowed to crush him during the Autumn Elections.
He rigged the 43rd Annual Tōtsuki Autumn Election by manipulating matchups to pit Subaru Mimasaka against Takumi Aldini and Sōma. Eizan further influenced outcomes by installing curry industry figures Natsume and Orie Sendawara as preliminary judges.
As a key enforcer for Azami's Central regime, Eizan led the dismantling of independent student clubs. He announced Polar Star Dormitory's shutdown and accepted Shokugeki challenges from rebels. Against Tetsuji Kabutoyama (Skewer Research Society), he bribed judges to declare victory without tasting either dish, dissolving the club and expelling Tetsuji. This intimidation tactic prompted most clubs to withdraw challenges.
Eizan later faced Sōma in a Shokugeki for Polar Star Dormitory's survival. He again bribed judges and accelerated the demolition schedule to demoralize Sōma. Learning the demolition was thwarted and Sōma remained undeterred, Eizan abandoned his initial strategy. He cooked Hainan Ji Fan attempting to crush Sōma's spirit through culinary skill, but the bribed judges praised Sōma's dish, securing Eizan's defeat.
During the Regimental Shokugeki, Eizan lost a beef-focused match against Takumi Aldini, contributing to Central's overall defeat and his expulsion from the Elite Ten Council.
