Hans begins as a junior Palace Guard in Aitheria, serving under Captain Berthold alongside his colleague Nikolaus. Nikolaus introduces him to Izakaya Nobu, where Hans becomes one of the earliest and most frequent patrons.

His father, Lorentz, is a prominent glassmaker in Aitheria's Craftsman Guild and an intermediary for the Water Transport Guilds. Lorentz's students later supply bento boxes used for the izakaya's eel dishes. Dissatisfied with his guard position, Hans frequently seeks career advice from the izakaya's owner, known as "Taishō," and develops a small crush on the waitress Shinobu Senke.

Over time, Hans forms a close friendship with Nikolaus and Berthold, often visiting the izakaya together. His evolving interest in food is reflected in specific orders like Chicken and Taro Stew, Kisu Tempura, and Kisu Tendon. This culinary exposure and Taishō's mentorship lead him to resign from the palace guard and begin a formal apprenticeship under Taishō to pursue cooking.

Hans occasionally mediates interactions between his father Lorentz and Taishō, particularly regarding collaborations like the bento box supply. His transition from guard to culinary apprentice marks a significant shift in his professional life, driven by his experiences at Izakaya Nobu.
