Eishi Tsukasa attended Tōtsuki Culinary Academy in the 90th Generation. During elementary school, he stole paint from a classmate to enhance his art project. Five years before the main storyline, as a first-year middle school student, he gained the "teacher crusher" reputation for relentlessly seeking feedback on his near-flawless dishes. This attracted Rindō Kobayashi, who forcibly befriended him. By his second high school year, he secured the Elite Ten Council's First Seat after decisively defeating Terunori Kuga in a Shokugeki; Kuga demanded a rematch contingent on Tsukasa matching his Moon Banquet Festival sales record.
Tsukasa has white hair covering his forehead and reaching his nape, with icy blue or white eyes. He typically wears the Tōtsuki uniform shirt slightly unbuttoned, his tie draped loosely over his left shoulder, and rarely dons the jacket.
Despite culinary eminence, he exhibits profound social anxiety and self-doubt, often exasperated by administrative duties and preferring solitude. He obsesses over minutiae affecting diner comfort, like seating or temperature, yet shows unwavering confidence in his cooking. His culinary philosophy—"Absence of Self"—focuses on erasing his presence to maximize ingredients' inherent qualities. This involves meticulous techniques to harmonize components into refined, distinct flavors, exemplified by his Moon Banquet Festival nine-course meal, including a sakura shrimp dish that induced temporary sensory blankness.
Beneath his anxiety lies elitism. After Azami Nakiri validated his frustrations with unappreciative audiences during a Las Vegas encounter, Tsukasa joined Central. He supported Azami's goal of eliminating "inferior" restaurants, believing only true culinary connoisseurs deserved recognition. He voted Azami into the headmaster position and later attempted to recruit Sōma Yukihira as a sous chef, prioritizing Sōma's assisting skills over his culinary perspective. This triggered a Shokugeki where Tsukasa wagered his First Seat against Sōma’s servitude, openly defending Central’s purge of substandard restaurants as a "necessary sacrifice."
During the Régiment de Cuisine’s fourth round, he battled Satoshi Isshiki using wild rabbit, defending Central’s authority despite exhaustion from prior matches. Post-Central’s defeat, his demeanor softened. At the BLUE tournament, competing as "The White Knight of the Table," he faced Asahi Saiba in a chicken-themed Shokugeki. Presenting herb-rubbed Poussin Chicken Rotir with feijoa mousse, he lost to Saiba’s amalgamated Noir techniques. After defeat, he urged Sōma to overthrow Saiba. Post-graduation, he engaged in friendly cooking matches with Sōma, acknowledging his growth without prior condescension.
