She began her career in entertainment as a child model from the age of six and made her screen debut in 1993 in Nobuhiko Obayashi's film The Water Travelers: Samurai Kids. Her breakthrough came in 1996 with a critically acclaimed performance in Shunji Iwai's film Swallowtail Butterfly. At just sixteen years old, her work in the film earned her the Newcomer of the Year Award and the Outstanding Supporting Actress Award at the 20th Japan Academy Film Prize.

While Ito is primarily known for her extensive work in live-action film and television, she has also built a notable career in voice acting, with her most prominent and enduring role being the voice of Tifa Lockhart in the Final Fantasy VII franchise. She first voiced the character in the 2005 computer-generated animated film Final Fantasy VII: Advent Children. She reprised this role in the same year for the original video animation Last Order: Final Fantasy VII and in 2009 for On the Way to a Smile - Episode Denzel: Final Fantasy VII. Her association with the character has continued for nearly two decades, as she has provided the voice for Tifa in numerous video game sequels and spin-offs. These include the Kingdom Hearts series, Dirge of Cerberus: Final Fantasy VII, Dissidia Final Fantasy, and most recently in the high-profile remake projects Final Fantasy VII Remake (2020), Final Fantasy VII Rebirth (2024), and Crisis Core: Final Fantasy VII Reunion (2022).

Beyond her iconic work in the Final Fantasy series, Ito's other voice acting credits include roles in the anime series ID: INVADED and Midnight Occult Civil Servants. Her filmography also extends to live-action adaptations of anime and manga, such as her role as Atsuko Urameshi in the 2023 Netflix series Yu Yu Hakusho.

In addition to her acting, Ito is also a talented vocalist. She was the lead singer for the rock band Mean Machine, which she formed in 2001 with fellow actresses and musicians Yuki, Chara, Yukarie, and Mayumi Chiwaki. Her career has been marked by versatility, moving seamlessly between independent films, major television dramas, and blockbuster video game projects, establishing her as a respected figure in the Japanese entertainment industry.
