She initially pursued training in theatrical acting before discovering her focus in voice acting. Palestino studied dubbing under Armando Coria Sr. and received early career opportunities from actor Narciso Busquets, which solidified her path in the industry.

Palestino is known for providing the Spanish voice for actresses such as Julia Roberts, Tilda Swinton, and Gwyneth Paltrow in numerous film dubs. Among her most recognized voice roles is Dory in the Spanish-language versions of the animated films Finding Nemo and its sequel Finding Dory. Her other notable work in animated features includes voicing Mel Jones and the Other Mother in the film Coraline and portraying Cass Hamada in the Spanish dub of Big Hero 6.

In the realm of anime and Japanese animation dubbed into Spanish, her credited roles include Pincho in the 1980 film Phoenix 2772 - Space Firebird. She also voiced the dual role of Honey Honey and Princesa Amaria in the series Honey Honey no Suteki na Bōken.
