Description
Ikumi Mito is a first-year student of the 92nd Generation at Tōtsuki Culinary Academy, where she is renowned as a specialist in meat dishes. She is the heir to the Mito family, a powerful and influential conglomerate that dominates Japan's meat industry, particularly the beef distribution sector. This background grants her access to premium, high-grade ingredients, such as A5-quality beef.

Physically, Ikumi has short blonde hair, often drawn with an "ahoge" (a cowlick), tanned skin, and turquoise or green eyes. Her attire is distinctive; she typically wears a modified version of the Tōtsuki summer uniform that exposes her cleavage, along with a choker that she never removes. Her cooking outfit is even more revealing, consisting of a bikini top, fringed shorts, leather wristbands, and an arm sheath for her kitchen knife.

Personality-wise, Ikumi is introduced as fiery, prideful, and combative, with a tendency to flaunt her skills and family status while intimidating those she considers inferior. This aggressive demeanor was forged by a strict upbringing, most notably on her ninth birthday when her father destroyed a teddy bear given to her by her mother, instructing her to discard what he perceived as feminine weaknesses to become a strong successor to the family business. She develops a strong but unspoken crush on Sōma Yukihira, often acting violently or becoming flustered when others tease her about her feelings. She dislikes her nickname "Nikumi" at first, a pun on the Japanese word for meat, but grows to accept it after Sōma comments that it sounds cute.

Ikumi's central motivation evolves over the course of the story. Initially, she seeks to prove the superiority of her elite meat-based cooking, acting as an enforcer for Erina Nakiri's faction by dismantling other culinary clubs. Her role shifts dramatically after her Shokugeki with Sōma. Tasked with dissolving the Don Research Society (Don RS) on Erina's orders, she challenges its president, Kanichi Konishi. Sōma intervenes on his behalf, and despite her confidence and use of premium A5 beef, her Donburi dish loses to Sōma's Chaliapin Steak Don, which the judges find to have superior overall harmony. Following her loss, Erina severs ties with her, and Ikumi is forced to join the Don Research Society as per the duel's terms. This marks a turning point, and she becomes a close ally and one of Sōma's most loyal friends, often misinterpreting his calls for help as invitations to be alone together before being annoyed to find others present.

In terms of key relationships, her dynamic with Sōma Yukihira is the most significant, transforming from rivalry to friendship and loyalty. She develops friendships with other students like Megumi Tadokoro, Ryōko Sakaki, and Yūki Yoshino from the Polar Star Dormitory through her association with Sōma. She also has a supportive, if begrudging, relationship with Kanichi Konishi, the president of the Don Research Society, whom she initially intimidated.

Throughout the series, Ikumi's development is tied to her culinary growth. Her weakness initially is an over-reliance on the quality of her meat, often neglecting the harmony between the main ingredient and accompanying elements like rice. After joining the Don RS, she learns to appreciate the balance required in a donburi dish, expanding her skills beyond just meat to create a more cohesive final product. She demonstrates this growth in events like the Autumn Elections with her Dongpo Pork Curry Don. Later, she aligns with the rebels against the Azami Nakiri Central regime and participates in the Régiment de Cuisine team battle.

Ikumi possesses several notable abilities as a chef. She is an expert butcher with the physical strength to handle large cuts of meat and the precision to prepare them delicately. Her lips are uniquely sensitive, allowing her to gauge the temperature of cooking surfaces without a thermometer. Her expertise in meat earns her titles such as "Meat Master" and, after further development, "Meat General".
