Her first major voice role came in 1994 when she provided her voice for a new German dub of the Disney animated film Snow White and the Seven Dwarfs. Doering later pursued formal training at the Hochschule für Schauspielkunst Ernst Busch in Berlin from 1998 to 2002. Following her graduation, she performed on stage at the GRIPS Theater in Berlin and appeared in German television productions such as the long-running series Großstadtrevier. While her on-screen appearances are limited, she has built a prolific and highly active career in dubbing, providing German voices for international films, television series, and animated productions.

Doering's extensive dubbing portfolio includes a substantial number of roles in anime and animated series, establishing her as a recognizable voice in the genre for German audiences. She is the German voice of Camilla, a colleague of the protagonist Yor Forger, in the popular anime series Spy x Family. In the series Kämpfer, she voiced the character Mikoto Kondō. Her work also encompasses classic anime adaptations of literature; she provided the voice for Annie Nan Harding in the 1993 Nippon Animation series Little Women II Jo's Boys and for Elizabeth Beth March in the earlier series Little Women. Her work extends to other animated productions, such as the role of Suki in Avatar The Last Airbender.

Beyond her work in anime, Doering is one of Germany's most sought-after dubbing actresses for live-action content. She is renowned as the primary German dubbing voice for Natalie Portman, having voiced her in major franchises including the Star Wars prequel trilogy as Padmé Amidala and the Thor films as Jane Foster. This collaboration spans over 25 years and includes films such as V for Vendetta, Black Swan, and Jackie. She is also the regular German voice for several other prominent actresses, including Reese Witherspoon, Jessica Chastain, Rebecca Hall, and Greta Gerwig.
